As we kick off the new year, we wanted to start recording some of our favorite recipes to use with our farm products and share them with you, our customers. We hope that you'll enjoy these dishes as much as we do.
What better way to start the new year and a new day than with an egg bake?! This past weekend we threw together a recipe for one that's been a hit with everyone who's tried it. It only takes a few ingredients (most of which you can find for sale here) and a little bit of time to prepare.
Ingredients
1 dozen Bula's eggs
1 lb Bula's Berkshire bacon
3-4 medium sized potatoes
1 sweet pepper
1 onion
1/3 C milk
1 3/4 C cheddar cheese
Directions
Preheat oven to 400°F and line a baking sheet with parchment paper.
Arrange bacon strips on the baking sheet and cook for 20 minutes or until bacon is crispy. Reduce oven temperature to 350°F when finished.
Place bacon on paper towel, pat down to remove grease, and crumble when ready.
In the meantime, grease a 9x13" baking pan, dice onion and peppers, peel and cube potatoes, and shred cheddar cheese.
Transfer approximately 3 T of bacon grease from baking sheet to a skillet
Add cubed potatoes and sauté for approximately 10 minutes or until nearly tender.
Add chopped peppers and onions to the skillet and sauté until onions are translucent.
In a large bowl, beat 1 dozen eggs and mix 1/3 C milk.
Add egg mixture, sautéed veggie/potato mix, 1 1/2 C of shredded cheese, and 3/4 of the crumbled bacon together to greased 9x13" baking pan. Top the pan with the leftover cheese and bacon.
Bake at 350°F for approximately 45 minutes. Cut the finished egg bake into squares and serve while hot.
