One of our favorite ways to use our ground beef and pork is this Bolognese recipe. Like all the best recipes, its composed of simple ingredients and really easy to prepare.
Ingredients
1 lb Grass-Finished Beef
1/2 lb Berkshire Pork Sausage
2-3 Carrots (1/2 C diced)
1-2 Onions (2 C diced)
3-4 Celery Stalks (1/2 C diced)
3-4 Cloves Garlic (minced)
1/4 C Extra Virgin Olive Oil
1/2 C Dry Red Wine (optional)
2 28 oz cans of San Marzano Peeled Tomatoes
1 tsp Oregano
1 tsp Basil
2 Bay Leaf
1/2 tsp Thyme
1/2 tsp Pepper Flakes (optional)
Pinch of Grated Nutmeg
Directions.
To a large sauce pan over medium heat add ¼ cup of extra virgin and once the oil is hot, add the onions and garlic and sauté until the onions are tender, about 4 minutes.
Add the celery and carrot to the pot and saute for about 8-10 minutes.
Raise heat to high and add the ground beef and pork sausage. Sauté, stirring frequently to break up any large pieces of meat. Cook until meat is browned, about 10 minutes.
Add wine to pot and stir for about 2 minutes.
Add in the tomatoes, bay leaves, basil, oregano, thyme, red pepper flakes, grated nutmeg, parmesan rind, and the salt and pepper to taste. Rinse the tomato cans with about ¼ water and pour into the pot as well.
Sauté on low for at least 45 minutes - 2 hours. Stirring occasionally
Serve with your preferred noodle, and top with parmesan and fresh basil.
